Or else it is because the proprietory stuff is what usually comes with the computers, and they figure once you become familiar with the proprietory stuff you can explore the open source yourself. There is no end to the open source stuff and it seems that it would be impossible to begin to cover it all in a course. One good place for open source stuff is Talking of open source, I use Open Office for my office software, Scribus for my desktop editing, .Audacity for my audio editing, Keepass for passwords, 7-Zip for compression, File Zilla for FTP, and Keynote for complex ideas, among others.
